Ippudo opened in Fukuoka in 1985 and now has locations worldwide. The Umeda branch serves Hakata-style tonkotsu. Pork bone broth simmered 18 hours, thin noodles, sliced chashu, kikurage. Every table has a container of spicy marinated bean sprouts. Free, unlimited. You grab a small plate and help yourself. Most people snack on them between bites rather than putting them in the bowl, though you can if you want. The Akamaru Modern is their spicier option with garlic oil and miso. English menu available.

Where exactly is Ippudo Umeda?

Located in the Umeda underground 'Whity' shopping mall, between JR Osaka Station and Hankyu/Hanshin Umeda Stations. From JR Osaka, take the Central North or East exit and follow signs to Whity Umeda — the restaurant is in the southern wing of the underground food street. How does the unlimited bean sprouts work?

Each table has a covered container of marinated spicy bean sprouts (moyashi) and a small dish for self-serving. Use the tongs provided. The sprouts are pre-seasoned with sesame oil, chili, and salt — eat them as a side snack between bites of ramen or add them on top for crunch. Free, unlimited refills. Pickled ginger and garlic crusher are also free at the counter. Don't double-dip your chopsticks into the communal moyashi container — use the tongs.

What ramen should I order?

Shiromaru Classic (¥850) is the original — clean tonkotsu broth, thin noodles, two slices of pork chashu, kikurage mushrooms, and sesame seeds. Akamaru Modern (¥950) adds a 'flavor ball' of garlic oil and miso for richer depth. Karaka-men (¥1,050) is the spicy mapo-style for chili lovers. Add an extra chashu (¥250 for 3 slices) and a kaedama (noodle refill, ¥150). Avoid: Frozen extras like the egg topping cost a lot for what you get.

Is there a wait? When should I come?

Lunch (12:00–13:30) typically has 15–30 minute waits; dinner (18:30–20:00) similar. Best windows for walk-in: opening at 11:00, 14:30–17:00, or after 21:00 (open until 23:00). Solo travelers seat fastest at the counter. The Umeda branch tends to be less crowded than the Dotonbori or Namba branches because it's mainly used by office workers — quiet on weekends.
